Ingredients
1 cup plain Greek yogurt
1/2 cucumber, grated and squeezed dry
1 clove garlic, minced
1 tablespoon fresh dill, chopped
1 tablespoon lemon juice
Salt and pepper to taste
4 large flour tortillas or pita wraps
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup Kalamata olives, sliced
1/2 cup crumbled feta cheese
1/2 cup red onion, thinly sliced
1 cup mixed greens or romaine lettuce
Instructions
Make the tzatziki: In a bowl, combine Greek yogurt, grated cucumber, garlic, dill, lemon juice, salt, and pepper. Mix well and refrigerate until ready to use.
Prepare the vegetables: Halve cherry tomatoes, dice cucumber, slice olives and red onion.
Warm the tortillas slightly in a dry skillet or microwave for easier rolling.
Spread about 2 tablespoons of tzatziki down the center of each tortilla.
Layer the mixed greens, tomatoes, cucumber, olives, red onion, and feta cheese evenly among the wraps.
Fold in the sides of the tortilla, then roll tightly from the bottom up, tucking in the filling as you go.
Slice each wrap in half diagonally and serve immediately, or wrap in foil for later.
