Ingredients
8 oz (225g) rotini or penne pasta
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup red onion, thinly sliced
1/2 cup Kalamata olives, pitted and halved
1/2 cup crumbled feta cheese
1/4 cup fresh parsley, chopped
1/4 cup extra virgin olive oil
2 tablespoons red wine vinegar
1 tablespoon lemon juice
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Cook pasta according to package directions until al dente. Drain and rinse under cold water to cool.
In a large bowl, combine cooled pasta, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, oregano, salt, and pepper.
Pour dressing over pasta mixture and toss gently to combine.
Refrigerate for at least 30 minutes before serving to allow flavors to meld. Serve chilled or at room temperature.
