Ingredients
1 lb boneless skinless chicken breasts, cut into 1-inch cubes
3 tbsp olive oil
2 tbsp lemon juice
3 cloves garlic, minced
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
4 large pita breads
1 cup tzatziki sauce
1 cup chopped tomatoes
1/2 cup sliced red onion
1 cup shredded lettuce
Instructions
In a bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken cubes and toss to coat. Marinate for at least 15 minutes.
Thread chicken onto skewers (if using wooden skewers, soak in water for 30 minutes first).
Grill or pan-sear skewers over medium-high heat for 10-12 minutes, turning occasionally, until chicken is cooked through and lightly charred.
Remove chicken from skewers and let rest for 2 minutes.
Warm pita breads on the grill or in a dry skillet for about 30 seconds per side.
Assemble wraps: spread tzatziki on each pita, top with chicken, tomatoes, red onion, and lettuce. Fold and serve.
Tips
For a traditional gyro flavor, substitute chicken with thinly sliced lamb or beef.
