These classic French cheese puffs are light, airy, and perfect as an appetizer or snack. Made with choux pastry and Gruyère, they are irresistible warm from the oven.

Ingredients
1/2 cup water
1/2 cup whole milk
1/2 cup unsalted butter, cut into pieces
1/2 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon freshly grated nutmeg
1 cup all-purpose flour
4 large eggs, at room temperature
1 1/2 cups grated Gruyère cheese (about 5 oz)
Instructions
Preheat oven to 425°F (220°C). Line two baking sheets with parchment paper.
In a medium saucepan, combine water, milk, butter, salt, pepper, and nutmeg. Bring to a boil over medium heat, stirring occasionally.
Add flour all at once and stir vigorously with a wooden spoon until the mixture forms a smooth ball and pulls away from the sides of the pan, about 1 minute.
Remove from heat and let cool for 2 minutes. Add eggs one at a time, beating well after each addition until the dough is smooth and shiny.
Stir in 1 cup of the grated Gruyère until combined.
Transfer dough to a piping bag fitted with a 1/2-inch round tip. Pipe 1-inch diameter mounds onto the prepared baking sheets, spacing about 2 inches apart.
Sprinkle the remaining 1/2 cup Gruyère over the tops of the puffs.
Bake for 20-25 minutes, until puffed and golden brown. Do not open the oven during the first 15 minutes. Serve warm.
Tips
For best results, use freshly grated Gruyère from a block.
Gougères can be frozen after baking; reheat in a 350°F oven for 5-10 minutes.
If you don't have a piping bag, you can drop spoonfuls of dough onto the baking sheet.
