  3. Place 5-8 grams of Oolong tea leaves into the gaiwan.
  4. Pour hot water over the leaves, filling the gaiwan to the brim, and immediately pour out the water (this is a rinse to awaken the leaves).
  5. Pour hot water into the gaiwan again, filling it to the brim, and cover with the lid.
  6. Steep for 20-30 seconds, then pour the tea into a fairness pitcher or directly into small cups.
  7. Repeat steps 5-6 for multiple infusions, increasing steeping time by 5-10 seconds each subsequent infusion. Gongfu Cha typically yields 5-10 infusions.
