Crispy, cheesy, and kid-approved chicken tenders made with a crunchy coating of crushed Goldfish crackers. Perfect for a fun weeknight dinner or party snack.
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and place a wire rack on top. Spray the rack with cooking spray.
In a shallow bowl, combine crushed Goldfish crackers, garlic powder, paprika, salt, and pepper. Set aside.
Place flour in another shallow bowl. In a third bowl, beat the eggs.
Pat chicken tenders dry with paper towels. Dredge each tender in flour, shaking off excess, then dip in egg, and finally coat with the Goldfish cracker mixture, pressing gently to adhere.
Place coated tenders on the prepared wire rack. Lightly spray the tops of the tenders with cooking spray.
Bake for 10-12 minutes, flipping halfway through, until golden brown and cooked through (internal temperature of 165°F).
Serve immediately with your favorite dipping sauce.
Tips
For extra crunch, use a food processor to crush the Goldfish crackers into a fine crumb.
These tenders can also be air-fried at 375°F for 8-10 minutes, flipping halfway.
