Ingredients
1 cup white rice flour
1/2 cup almond flour
2 tablespoons sugar
2 teaspoons baking powder

1 cup milk (dairy or non-dairy)

Instructions
In a large bowl, whisk together rice flour, almond flour, sugar, baking powder, and salt.
In a separate bowl, whisk together milk, eggs, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
For pancakes: Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil. Pour about 1/4 cup batter per pancake onto the hot surface. Cook until bubbles form on the surface and edges look set, about 2-3 minutes. Flip and cook until golden brown, about 1-2 minutes more.
For waffles: Preheat a waffle iron and lightly grease. Pour enough batter to cover the center of the iron (about 1/2 cup for a standard waffle iron). Close and cook according to manufacturer's instructions until golden and crisp, about 4-5 minutes.
