Ingredients
- 1 cup white rice (short-grain or jasmine)
- 8 cups water or low-sodium chicken broth
- 1/2 cup shelled ginkgo nuts (fresh or frozen, thawed)
- 1 tablespoon ginger, thinly sliced
- 1 teaspoon salt, or to taste
- 1/4 teaspoon white pepper
- 1 tablespoon sesame oil
- 2 green onions, thinly sliced (for garnish)
Instructions
- Rinse the rice under cold water until the water runs clear. Drain.
- In a large pot, combine the rice and water or broth. Bring to a boil over high heat.
- Reduce heat to low, add the ginger slices, and simmer partially covered for 45 minutes, stirring occasionally to prevent sticking.
- Add the ginkgo nuts and continue to simmer for another 15 minutes, until the congee is thick and creamy and the nuts are tender.
- Season with salt and white pepper. Remove from heat and stir in sesame oil.
- Ladle into bowls and garnish with sliced green onions. Serve hot.
