Ingredients
1 cup mixed nuts (almonds, pecans, cashews)
1 tablespoon olive oil
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
8 ounces dark chocolate (70% cocoa), chopped
1/2 cup heavy cream
1 teaspoon vanilla extract
1 cup all-purpose flour
1/4 cup granulated sugar
1/2 cup unsalted butter, cold and cubed
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1/4 cup powdered sugar (for dusting)
Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
For spiced nuts: Toss nuts with olive oil, smoked paprika, cayenne, and salt. Spread on baking sheet and roast for 10-12 minutes, stirring once. Let cool completely.
For chocolate truffles: Place chopped chocolate in a bowl. Heat cream in a small saucepan until just simmering, then pour over chocolate. Let sit 2 minutes, then stir until smooth. Stir in vanilla. Refrigerate until firm, about 1 hour.
Roll truffles into 1-inch balls. (Optional: coat with cocoa powder or chopped nuts.)
For shortbread: In a food processor, pulse flour, sugar, butter, salt, and vanilla until dough comes together. Press into an 8-inch square pan lined with parchment. Prick with fork.
Bake shortbread at 350°F for 20-25 minutes until edges are golden. Cool in pan 10 minutes, then cut into squares. Dust with powdered sugar.
Assemble gift boxes: Arrange a portion of spiced nuts, 2-3 truffles, and 2-3 shortbread cookies in a small gift box or cellophane bag.
Seal and decorate as desired. Store in a cool place.

Truffles can be made up to 1 week ahead and refrigerated.
Shortbread keeps well for up to 2 weeks in an airtight container.
