Instructions
Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
In a large bowl, beat 1 cup softened butter, granulated sugar, brown sugar, and 1 teaspoon vanilla extract until creamy. Add eggs one at a time, beating well after each.
Gradually add flour mixture to butter mixture, mixing until just combined. Stir in chocolate chips.
Drop rounded tablespoons of dough onto prepared baking sheets, 2 inches apart. Bake for 9-11 minutes or until golden brown. Cool on baking sheets for 2 minutes, then transfer to wire racks to cool completely.
For the filling, beat 1/2 cup softened butter, powdered sugar, 1 teaspoon vanilla extract, and milk until smooth and creamy.
Spread about 1 tablespoon of filling onto the flat side of one cookie, then top with another cookie to form a sandwich. Repeat with remaining cookies.
Arrange sandwich cookies on a platter and serve.
