Ingredients
2 pounds Yukon Gold potatoes, peeled and cut into 1-inch chunks
1 head garlic
1 teaspoon olive oil
4 tablespoons unsalted butter, softened
1/2 cup whole milk, warmed
1/2 cup heavy cream, warmed
Salt and freshly ground black pepper to taste
2 tablespoons chopped fresh chives (optional)
Instructions
Preheat oven to 400°F. Cut the top off the garlic head to expose cloves, drizzle with olive oil, wrap in foil, and roast for 25 minutes until soft. Let cool, then squeeze cloves into a bowl and mash with a fork.
Place potatoes in a large pot and cover with cold salted water. Bring to a boil, then reduce to a simmer and cook until fork-tender, about 15 minutes.
Drain potatoes well and return to the pot over low heat for 1 minute to dry. Remove from heat.
Mash potatoes with a potato masher or ricer until smooth. Add roasted garlic, butter, warm milk, and warm cream; stir until combined and creamy. Season with salt and pepper.
Fold in chives if using. Serve hot.
