Ingredients
1 cup unsalted butter, softened
1 cup granulated sugar
1 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
24 fudge cubes (such as Ghirardelli Dark Chocolate Melting Wafers or homemade fudge cut into 1-inch cubes)
Instructions
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually add to butter mixture, mixing until just combined.
Take about 1 tablespoon of dough and flatten it in your palm. Place a fudge cube in the center, then wrap the dough around it, sealing completely. Roll into a ball.
Place balls 2 inches apart on prepared baking sheets. Bake for 10-12 minutes, until edges are set and tops are slightly cracked.
Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
