Instructions

  1. In a medium saucepan, combine heavy cream, milk, 1/2 cup sugar, and salt. Heat over medium heat until steaming, stirring occasionally. Do not boil.
  2. In a separate bowl, whisk egg yolks with remaining 1/4 cup sugar until pale and thick. Slowly pour about 1 cup of the hot cream mixture into the yolks, whisking constantly, then pour the yolk mixture back into the saucepan.
  3. Cook over medium-low heat, stirring constantly with a wooden spoon, until the custard thickens and coats the back of the spoon (about 5-7 minutes). Do not let it boil. Remove from heat and stir in vanilla extract.
  4. Strain the custard through a fine-mesh sieve into a bowl. Let cool to room temperature, then cover and refrigerate until thoroughly chilled, at least 4 hours or overnight.
  5. To make the fudge ripple: In a small saucepan, combine sweetened condensed milk, chocolate chips, butter, corn syrup, and water. Cook over low heat, stirring constantly, until chocolate is melted and mixture is smooth. Remove from heat and let cool to room temperature.
  6. Once custard is chilled, pour it into a 9x5-inch loaf pan. Drizzle the fudge sauce over the top in a random pattern. Use a knife to gently swirl the fudge into the ice cream base.
  7. Freeze for at least 6 hours or until firm. Let sit at room temperature for 5 minutes before scooping.
