3/4 cup unsweetened cocoa powder

2 large eggs
1 cup whole milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
1/2 cup unsalted butter
1/3 cup unsweetened cocoa powder
3 cups confectioners' sugar
1/3 cup whole milk
1 teaspoon vanilla extract
Instructions
Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large bowl, whisk together flour, sugar, 3/4 cup cocoa, baking powder, baking soda, and salt.
Add eggs, milk, oil, and 2 teaspoons vanilla; beat on medium speed for 2 minutes. Stir in boiling water (batter will be thin).
Pour batter into prepared pans. Bake 30-35 minutes until a toothpick inserted in center comes out clean. Cool in pans 10 minutes, then remove to wire racks to cool completely.
For glaze: In a saucepan, melt butter. Stir in 1/3 cup cocoa. Alternately add confectioners' sugar and milk, beating on low speed. Stir in 1 teaspoon vanilla.
Place one cake layer on serving plate; spread with some glaze. Top with second layer; pour remaining glaze over top, letting it drip down sides.

For a richer flavor, substitute strong brewed coffee for the boiling water.
