Ingredients
2 cups fresh strawberries, hulled
1 cup fresh raspberries
1 cup fresh mango chunks
1/2 cup granulated sugar
1/4 cup fresh lemon juice
1 cup cold water
1/2 cup heavy cream
Instructions
In a blender, combine strawberries, raspberries, mango, sugar, lemon juice, and water. Blend until smooth.
Strain the fruit puree through a fine-mesh sieve into a bowl, pressing on solids; discard solids. Cover and refrigerate until cold, about 1 hour.
In a separate bowl, whip the heavy cream to soft peaks. Gently fold the whipped cream into the chilled fruit puree until just combined.
Pour the mixture into an ice cream maker and churn according to manufacturer's instructions until it reaches a soft-serve consistency.
Transfer the sherbet to a freezer-safe container. Use a spoon or knife to create swirls by gently folding the mixture a few times. Cover and freeze until firm, at least 4 hours or overnight.
Before serving, let the sherbet sit at room temperature for 5-10 minutes to soften slightly. Scoop and serve.
Tips
For a dairy-free version, substitute heavy cream with full-fat coconut cream.
You can use any combination of soft fruits like peaches, blueberries, or bananas.
