Ingredients
1 (6 oz) package strawberry-flavored gelatin
1 (6 oz) package lemon-flavored gelatin
2 cups boiling water
2 cups cold water
1 (20 oz) can crushed pineapple, drained
1 (15 oz) can mandarin oranges, drained
1 cup seedless grapes, halved
1 cup fresh strawberries, sliced
1 cup fresh blueberries
Instructions
In a large bowl, dissolve both packages of gelatin in 2 cups boiling water. Stir until completely dissolved, about 2 minutes.
Add 2 cups cold water and stir. Refrigerate for about 45 minutes, or until slightly thickened (consistency of raw egg whites).
Fold in the drained pineapple, mandarin oranges, grapes, strawberries, and blueberries until evenly distributed.
Pour the mixture into a 9x13-inch dish or a large gelatin mold. Cover and refrigerate for at least 4 hours, or until firm.
To serve, cut into squares or unmold onto a serving platter. Keep refrigerated until ready to serve.
Tips
For a lighter version, use sugar-free gelatin and canned fruit in juice.
Add other fruits like diced peaches or raspberries as desired.
Store leftovers covered in the refrigerator for up to 3 days.
