Ingredients
1/2 cup pineapple juice
1/4 cup orange juice
3 tablespoons soy sauce
2 tablespoons olive oil
2 tablespoons brown sugar
3 cloves garlic, minced
1 teaspoon grated fresh ginger
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
In a medium bowl, whisk together pineapple juice, orange juice, soy sauce, olive oil, brown sugar, garlic, ginger, salt, and pepper until sugar dissolves.
Place meat (about 2 lbs) in a resealable plastic bag or shallow dish. Pour marinade over meat, turning to coat.
Seal bag or cover dish; refrigerate at least 2 hours or up to 8 hours, turning occasionally.
Remove meat from marinade; discard leftover marinade. Pat meat dry before cooking as desired (grill, pan-sear, or bake).
Tips
For best flavor, marinate at least 4 hours.
Do not reuse marinade; discard after use.
This marinade works well with chicken thighs, pork chops, or flank steak.
Leftover marinade can be boiled for 5 minutes to use as a sauce.
