Instructions
- Line an 8x8-inch baking dish with parchment paper, leaving overhang on two sides.
- In a large bowl, combine oats, dried apricots, raisins, almonds, sunflower seeds, and salt.
- In a small saucepan over low heat, warm honey and peanut butter, stirring until smooth. Remove from heat and stir in vanilla.
- Pour the honey mixture over the oat mixture and stir until well combined.
- Transfer the mixture to the prepared dish and press firmly into an even layer using a spatula or your hands.
