Ingredients
4 large eggs
1/2 cup whole milk
1 tablespoon granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
8 slices brioche or challah bread (1 inch thick)
2 tablespoons unsalted butter
1 cup mixed fresh berries (strawberries, blueberries, raspberries)
1/2 cup heavy cream
1 tablespoon powdered sugar
1/2 teaspoon vanilla extract
Instructions
In a shallow dish, whisk together eggs, milk, sugar, vanilla, and cinnamon until well combined.
Heat a large nonstick skillet or griddle over medium heat and add 1 tablespoon butter.
Dip each bread slice into the egg mixture, letting it soak for about 15 seconds per side, then place in the hot skillet.
Cook until golden brown, about 2-3 minutes per side. Add remaining butter as needed.
Meanwhile, in a small bowl, whip heavy cream, powdered sugar, and vanilla with a hand mixer until soft peaks form.
To serve, place two slices of French toast on each plate, top with fresh berries, and drizzle with whipped cream.
Tips
For extra richness, use half-and-half instead of milk.
Try topping with maple syrup or a dusting of cinnamon sugar.
Store leftover French toast in the refrigerator for up to 2 days; reheat in a toaster or oven.
