- 6 cups cold water
- 2 tablespoons white vinegar
- 6 cups vegetable oil, for frying

Instructions
- Peel potatoes and cut into 1/4-inch thick sticks. Place in a large bowl of cold water with vinegar; soak for at least 30 minutes.
- Drain potatoes and pat thoroughly dry with paper towels.
- Heat oil in a deep pot to 325°F. Fry potatoes in batches for 4-5 minutes until pale and cooked through but not browned. Drain on paper towels.
- Increase oil temperature to 375°F. Fry potatoes again in batches for 2-3 minutes until golden and crispy.
- Drain on paper towels, season immediately with salt, and serve hot.
