Ingredients
1/2 cup water
1/2 cup granulated sugar
4 green cardamom pods, lightly crushed
2 tablespoons rose water
1/4 teaspoon saffron threads, crushed
1 tablespoon slivered almonds (optional)
Instructions
In a small saucepan, combine water, sugar, and crushed cardamom pods. Bring to a boil over medium heat, stirring until sugar dissolves.
Reduce heat to low and simmer for 5 minutes, until slightly syrupy.
Remove from heat. Stir in rose water and crushed saffron. Let steep for 5 minutes.
Strain the syrup through a fine-mesh sieve into a small bowl or jar, discarding cardamom pods. Stir in slivered almonds if using.
Cool completely before using. Drizzle over rice pudding or stir in to taste.
Tips
Store in an airtight container in the refrigerator for up to 2 weeks.
Adjust sweetness by adding more or less sugar.
Substitute rose water with orange blossom water for a different floral note.
