Ingredients
1.5 lbs ground beef (80/20)
4 burger buns
4 slices cheddar cheese
4 leaves lettuce
4 slices tomato
4 slices red onion
4 tbsp mayonnaise
2 tbsp ketchup
1 tbsp yellow mustard
1 tsp pickle relish
1/2 tsp smoked paprika
Salt and pepper to taste
4 large potatoes, cut into fries
2 tbsp olive oil
1 tsp garlic powder
Instructions
Preheat grill to high heat (about 500°F). For charcoal, wait until coals are white-hot.
Divide ground beef into 4 equal portions and shape into patties slightly larger than buns. Season generously with salt, pepper, and smoked paprika. Make a small indent in center of each patty.
Toss potato fries with olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and bake at 425°F for 20-25 minutes, flipping halfway, until golden and crispy.
Grill patties over direct high heat for 4 minutes per side for medium. During last minute, top each patty with cheese and close grill lid to melt.
Toast buns cut-side down on grill for about 30 seconds.
Mix mayonnaise, ketchup, mustard, and pickle relish in a small bowl to make special sauce.
Assemble burgers: spread sauce on bottom bun, add lettuce, tomato, onion, patty with cheese, then top bun.
Serve burgers hot with fries on the side.
Tips
For extra smoky flavor, add a handful of soaked wood chips to the charcoal.
Let patties rest for 5 minutes after grilling to retain juices.
Store leftover sauce in the fridge for up to a week.
To make fries extra crispy, soak cut potatoes in cold water for 30 minutes before baking.
