Ingredients
4 (6-ounce) cod or haddock fillets
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup all-purpose flour
2 large eggs
1 cup panko breadcrumbs
1/2 cup vegetable oil, for frying
4 hamburger buns, split and toasted
4 leaves lettuce
4 slices tomato
1/2 cup tartar sauce
Instructions
Season fish fillets with salt and pepper.
Place flour in a shallow dish. Beat eggs in another shallow dish. Place panko in a third dish.
Dredge each fillet in flour, shaking off excess. Dip in egg, then coat with panko, pressing gently to adhere.
Heat oil in a large skillet over medium-high heat. Fry fillets until golden brown and cooked through, about 3-4 minutes per side. Drain on paper towels.
Spread tartar sauce on the cut sides of each bun. Place lettuce and tomato on bottom buns, then top with a fish fillet. Close sandwiches and serve immediately.
Tips
For extra crunch, use panko breadcrumbs instead of regular breadcrumbs.
Serve with lemon wedges and extra tartar sauce on the side.
