A homemade version of the classic fast-food fish sandwich, featuring crispy breaded fish fillets, melted cheese, and tangy tartar sauce on a soft bun.

Ingredients
4 (4-ounce) cod or pollock fillets
1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1 large egg
1/2 cup milk
1 cup panko breadcrumbs
Vegetable oil for frying
4 slices American cheese
4 soft hamburger buns, split and toasted
1/4 cup tartar sauce
Optional: lettuce leaves, tomato slices
Instructions
Pat fish fillets dry with paper towels. Season with salt and pepper.
Set up breading station: In a shallow dish, combine flour, salt, and pepper. In another dish, whisk egg and milk. In a third dish, place panko breadcrumbs.
Dredge each fillet in flour mixture, shaking off excess. Dip into egg mixture, then coat with panko, pressing gently to adhere.
Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat to 350°F (175°C). Fry fillets for 3-4 minutes per side until golden brown and cooked through. Drain on paper towels.
Place a slice of cheese on each fillet while hot to melt slightly.
Spread tartar sauce on the bottom half of each bun. Add fish fillet with cheese, then top with bun. Serve immediately.
Tips
For extra crispiness, use panko breadcrumbs and do not overcrowd the pan when frying.
Can substitute with any white fish like haddock or tilapia.
To keep warm, place cooked fillets on a baking sheet in a 200°F oven while frying remaining batches.
