Ingredients
4 cod fillets (about 4 oz each)
1/2 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1 large egg
1/2 cup milk
1 cup panko breadcrumbs
Vegetable oil for frying
4 slices American cheese
4 soft hamburger buns
1/2 cup tartar sauce
Lettuce leaves (optional)
Instructions
Pat fish fillets dry with paper towels. Season with salt and pepper.
Set up breading station: In a shallow dish, mix flour, 1/2 tsp salt, 1/4 tsp pepper, and paprika. In another dish, whisk egg and milk. In a third dish, place panko.
Dredge each fillet in flour mixture, shaking off excess. Dip into egg mixture, then coat with panko, pressing gently to adhere.
Heat about 1/2 inch oil in a large skillet over medium-high heat to 350°F (175°C).
Fry fillets for 3-4 minutes per side until golden brown and cooked through. Drain on paper towels.
Place a slice of cheese on each fillet while hot to melt.
Toast buns lightly. Spread tartar sauce on bottom buns. Add fish fillet with cheese, then lettuce if desired. Close with top bun.
Serve immediately.
Tips
For extra crispy fish, use panko breadcrumbs and ensure oil is hot enough.
You can substitute cod with haddock or pollock.
Tartar sauce can be store-bought or homemade with mayo, pickles, and lemon juice.
