Ingredients
1 lb boneless skinless chicken breasts
1 tbsp olive oil
1 packet (1 oz) taco seasoning
1/2 cup water
1 bag (13 oz) tortilla chips
2 cups shredded Mexican blend cheese
1 can (15 oz) black beans, drained and rinsed
1 cup diced tomatoes
1/2 cup sliced black olives
1/4 cup sliced jalapeños
1/2 cup sour cream
1/2 cup guacamole
1/4 cup chopped fresh cilantro
Instructions
Preheat oven to 400°F (200°C).
Season chicken breasts with taco seasoning. In a skillet over medium heat, heat olive oil and cook chicken until browned and cooked through, about 6-8 minutes per side. Let rest, then shred with two forks.
Return shredded chicken to skillet, add water, and simmer until liquid is absorbed, about 2 minutes.
Spread tortilla chips in a single layer on a large oven-safe platter or baking sheet. Top with shredded chicken, black beans, diced tomatoes, olives, jalapeños, and cheese.
Bake for 10-12 minutes until cheese is melted and bubbly.
Remove from oven and top with dollops of sour cream and guacamole. Sprinkle with cilantro. Serve immediately.
Tips
For extra heat, add more jalapeños or a drizzle of hot sauce.
To make ahead, prepare chicken mixture and refrigerate; assemble and bake just before serving.
