Ingredients
2 tablespoons vegetable oil
1 red bell pepper, sliced
1 green bell pepper, sliced
1 onion, sliced
1 lb boneless skinless chicken breasts, sliced into strips
2 tablespoons fajita seasoning
8 large flour tortillas
2 cups shredded Monterey Jack cheese
Sour cream, for serving
Salsa, for serving
Instructions
Heat 1 tablespoon oil in a large skillet over medium-high heat. Add bell peppers and onion; cook until softened, about 5 minutes. Transfer to a bowl.
In the same skillet, add remaining 1 tablespoon oil and chicken strips. Sprinkle with fajita seasoning and cook until chicken is cooked through, about 6-8 minutes. Return peppers and onions to skillet; stir to combine.
Lay 4 tortillas on a work surface. Divide chicken mixture evenly among tortillas, then top with cheese. Place remaining tortillas on top.
Wipe skillet clean and heat over medium heat. Cook each quesadilla for 2-3 minutes per side, until golden brown and cheese is melted. Cut into wedges and serve with sour cream and salsa.
Tips
For extra flavor, add sliced jalapeños or a squeeze of lime juice.
Substitute chicken with beef strips or shrimp if desired.
