Ingredients
2 cups (480 ml) energy drink (e.g., Red Bull, Monster, or your choice)
1/4 cup (50 g) granulated sugar
1 tablespoon fresh lemon juice
1 teaspoon unflavored gelatin (optional, for smoother texture)
Instructions
In a small bowl, sprinkle gelatin over 2 tablespoons of the energy drink and let stand for 5 minutes to bloom.
In a medium saucepan, heat the remaining energy drink with sugar over medium heat, stirring until sugar dissolves. Do not boil.
Remove from heat and stir in the bloomed gelatin mixture and lemon juice until fully dissolved.
Pour the mixture into a shallow dish (like a 9x13 inch pan) and let cool to room temperature.
Place the dish in the freezer. Every 30 minutes, stir the mixture with a fork to break up ice crystals, for about 2-3 hours until slushy and fully frozen.
Once firm, scrape with a fork to create a fluffy sorbet texture. Serve immediately or store in an airtight container in the freezer.
Tips
For a dairy-free version, omit gelatin; the sorbet will be icier.
Adjust sweetness by using a sugar-free energy drink and omitting added sugar.
Serve in chilled bowls or glasses for best texture.
