Ingredients

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place potatoes in a large pot, cover with salted water, and bring to a boil. Cook until tender, about 15 minutes. Drain and mash with milk and butter until smooth. Season with salt and pepper.
  3. While potatoes cook, heat 2 tbsp olive oil in a large skillet over medium-high heat. Add ground elk and cook, breaking it apart, until browned. Remove elk and set aside.
  4. Add remaining 1 tbsp olive oil to the skillet. Sauté onion, carrots, and celery until softened, about 5 minutes. Add garlic and cook 1 minute more.
  5. Stir in tomato paste, flour, thyme, and rosemary; cook for 1 minute. Gradually pour in beef broth, stirring constantly. Bring to a simmer and cook until thickened, about 2-3 minutes.
  6. Return elk to the skillet, add frozen peas, and stir to combine. Season with salt and pepper. Transfer mixture to a 9x13-inch baking dish.
  7. Spread mashed potatoes evenly over the elk mixture. If using, sprinkle cheddar cheese on top.
  8. Bake for 25-30 minutes, until the filling is bubbly and the top is golden. Let cool for 5 minutes before serving.
