Ingredients
1 everything bagel, split
2 tablespoons cream cheese, softened
2 ounces lox (smoked salmon)
1 large egg
1 teaspoon butter or oil
1 slice red onion (optional)
1 teaspoon capers (optional)
Salt and pepper to taste
Instructions
Toast the bagel halves until golden brown.
Spread cream cheese on both cut sides of the bagel.
Layer lox on the bottom half. Add red onion slices and capers if desired.
In a small nonstick skillet, melt butter over medium heat. Crack the egg into the pan and cook until whites are set but yolk is still runny, about 3 minutes. Season with salt and pepper.
Place the cooked egg on top of the lox. Close the sandwich with the top bagel half.
Serve immediately.
