  1. Divide ground beef into 8 equal portions (about 3 oz each). Form each into a thin patty, slightly larger than the bun. Season with salt and pepper.
  2. Heat a griddle or large skillet over medium-high heat. Toast buns cut-side down until golden, about 1 minute. Set aside.
  3. Cook patties in batches, pressing down with a spatula. After about 2 minutes, flip and top each with a slice of cheese. Cook until cheese melts, about 1 more minute.
  4. Spread mayonnaise on bottom bun, then ketchup and mustard on top bun.
  5. On bottom bun, layer: 2 pickle slices, 1 lettuce leaf, 1 tomato slice, then two cheese-topped patties stacked. Add onion rings.
  6. Close burger with top bun. Serve immediately.
