Ingredients
1 lb ground beef
1 medium onion, chopped
1 (10 oz) can Rotel tomatoes with green chiles, undrained
1 (10.75 oz) can condensed cream of mushroom soup
1 (10.75 oz) can condensed cream of chicken soup
1 cup sour cream
1 (1 oz) packet taco seasoning
1 (14.5 oz) bag Nacho Cheese Doritos, crushed
2 cups shredded Mexican blend cheese
Optional toppings: diced tomatoes, sliced black olives, chopped green onions, sour cream
Instructions
Preheat oven to 350°F. Grease a 9x13-inch baking dish.
In a large skillet over medium-high heat, cook ground beef and onion until beef is browned and onion is tender; drain fat.
Stir in Rotel tomatoes, cream of mushroom soup, cream of chicken soup, sour cream, and taco seasoning. Mix well and simmer for 5 minutes.
Spread half of the crushed Doritos in the bottom of the prepared baking dish. Top with half of the beef mixture, then half of the cheese. Repeat layers with remaining Doritos, beef mixture, and cheese.
Bake uncovered for 25-30 minutes, until hot and bubbly. Let stand 5 minutes before serving. Garnish with optional toppings as desired.
Tips
For a spicier casserole, use hot Rotel or add a diced jalapeño.
Substitute ground turkey or chicken for a lighter version.
