Ingredients
4 flat-bottomed waffle cones
4 scoops vanilla ice cream (about 2 cups total)
1 cup semisweet chocolate chips
2 tablespoons coconut oil or vegetable oil
1/2 cup rainbow sprinkles
Instructions
Place a sheet of parchment paper on a baking sheet. Set aside.
In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring after each, until melted and smooth.
Dip the rim of each ice cream scoop into the melted chocolate, then immediately roll in sprinkles. Place on the parchment-lined sheet.
Working quickly, fill each cone with a scoop of ice cream, pressing gently to pack. Return to freezer for at least 15 minutes to set.
Once set, dip the top of each ice cream scoop into the melted chocolate, letting excess drip off. Immediately roll in sprinkles. Return to freezer for 10 minutes to harden.
