Ingredients
4 sugar cones
4 scoops vanilla ice cream
1 cup semisweet chocolate chips
2 tablespoons coconut oil
1/2 cup rainbow sprinkles
Instructions
Place a scoop of vanilla ice cream into each sugar cone, pressing gently to fill the cone and form a rounded top.
Place the filled cones on a baking sheet lined with parchment paper and freeze for at least 1 hour, until solid.
In a small microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until smooth.
Pour the sprinkles into a shallow dish. One at a time, dip the top of each frozen ice cream cone into the melted chocolate, allowing excess to drip off.
Immediately roll the dipped cone in sprinkles to coat evenly. Place back on the parchment-lined sheet.
Return to the freezer for at least 15 minutes to set the chocolate. Serve immediately or store in the freezer.
