A surprisingly delicious and tender chicken dish made with diet cola, soy sauce, and ginger. The soda tenderizes the meat and creates a savory-sweet glaze without the sugar of regular cola.
1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thicker sauce)
Instructions
Pat chicken thighs dry with paper towels. Season lightly with pepper.
Heat olive oil in a large skillet over medium-high heat. Add chicken thighs and cook until browned, about 4 minutes per side.
In a small bowl, mix together diet cola, soy sauce, garlic, and ginger. Pour over chicken in the skillet.
Bring to a boil, then reduce heat to medium-low. Cover and simmer for 20 minutes, flipping chicken halfway through.
Remove lid and increase heat to medium-high. Let sauce reduce for 5-7 minutes, until slightly thickened and chicken is cooked through (internal temp 165°F).
If desired, stir in cornstarch slurry and cook 1 minute more until sauce thickens. Serve chicken with sauce spooned over.
Tips
For best flavor, use a diet cola with caramel color and natural flavors (like Diet Coke).
