1/2 cup granulated sugar
2 tablespoons unsalted butter
1/4 cup water
1/2 cup dark chocolate chips
1/4 cup unsweetened cocoa powder
1/4 cup light corn syrup
1 teaspoon vanilla extract
1 cup heavy cream
2 tablespoons powdered sugar
1/2 teaspoon vanilla extract

For chocolate sauce: In a small saucepan, combine chocolate chips, cocoa powder, corn syrup, and 1/4 cup water. Cook over low heat, stirring constantly, until smooth. Remove from heat and stir in 1/2 teaspoon vanilla. Let cool.
For caramel sauce: In a medium saucepan, combine sugar and 1/4 cup water. Cook over medium heat without stirring until amber colored, about 6-8 minutes. Remove from heat and carefully whisk in heavy cream and butter until smooth. Stir in remaining 1/2 teaspoon vanilla. Let cool.
For whipped cream: In a chilled bowl, beat 1 cup heavy cream, powdered sugar, and 1/2 teaspoon vanilla with an electric mixer until soft peaks form.
Serve each topping separately or drizzle over desserts.
Tips
Store chocolate and caramel sauces in the refrigerator for up to 2 weeks. Reheat gently before serving.
Whipped cream is best used immediately but can be refrigerated for up to 2 hours.
For a salted caramel, add a pinch of sea salt at the end.
