Ingredients
8 large eggs
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons butter
1/2 cup diced ham
1/2 cup diced green bell pepper
1/2 cup diced onion
1 cup shredded cheddar cheese
4 large flour tortillas (10-inch)
Optional: salsa, sour cream, hot sauce for serving
Instructions
In a medium bowl, whisk together eggs, milk, salt, and pepper until well combined.
Melt butter in a large nonstick skillet over medium heat. Add ham, bell pepper, and onion; cook, stirring occasionally, until vegetables are tender, about 4 minutes.
Pour egg mixture into the skillet. Cook, stirring gently with a spatula, until eggs are set but still moist, about 3-4 minutes. Remove from heat and stir in cheese until melted.
Warm tortillas in a dry skillet or microwave for about 20 seconds to make pliable.
Spoon about 1/4 of the egg mixture down the center of each tortilla. Fold in the sides, then roll up tightly from the bottom to enclose the filling.
Serve immediately with salsa, sour cream, or hot sauce if desired.

For a crispier burrito, toast the assembled burrito in a dry skillet over medium heat for 1-2 minutes per side.
