Ingredients
1 large egg
1 tablespoon milk
Salt and freshly ground black pepper to taste
1 tablespoon unsalted butter
2 slices bacon
1 kaiser roll or bulkie roll, split
1 slice American cheese
1 tablespoon mayonnaise (optional)
Instructions
Cook bacon in a skillet over medium heat until crispy, about 4-5 minutes. Transfer to paper towels to drain. Pour off all but 1 teaspoon of fat from the skillet.
In a small bowl, whisk egg, milk, salt, and pepper until frothy.
Melt butter in the same skillet over medium-low heat. Pour in egg mixture and cook, stirring gently with a spatula, until just set but still soft, about 1-2 minutes. Remove from heat.
Toast the roll halves in a toaster or under the broiler until lightly golden.
Spread mayonnaise on the top half of the roll (if using). Place the cooked egg on the bottom half, top with cheese, then bacon. Close with the top half.
Serve immediately.
Tips
For a richer flavor, use brioche or ciabatta roll.
Add a slice of tomato or avocado for extra freshness.
