Ingredients
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup unsalted butter, softened
1 1/2 cups granulated sugar
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon almond extract
3 cups powdered sugar
2 large egg whites
1 teaspoon lemon juice
Assorted food coloring gels
Instructions
Preheat oven to 375°F. Line baking sheets with parchment paper.
Whisk flour, baking soda, and baking powder together in a medium bowl.
In a large bowl, beat butter and granulated sugar until light and fluffy. Add egg, vanilla, and almond extract; beat until combined.
Gradually add flour mixture to butter mixture, mixing until just combined. Divide dough in half, wrap in plastic, and refrigerate for at least 1 hour.
On a lightly floured surface, roll out dough to 1/4-inch thickness. Cut into desired shapes and place on prepared baking sheets.
Bake for 8-10 minutes, until edges are lightly golden. Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
For royal icing: Beat powdered sugar, egg whites, and lemon juice until smooth and thick, about 5 minutes. Divide into bowls and tint with food coloring.
Transfer icing to piping bags with small tips. Outline cookies, then flood with thinned icing (add water a few drops at a time). Use a toothpick to spread and pop air bubbles.
Decorate with additional colors and patterns while icing is wet. Let dry completely, at least 4 hours or overnight.
Arrange cookies on platters, grouping by color or theme. Serve or store in airtight containers for up to 2 weeks.
Tips
For crisp cookies, chill dough thoroughly before rolling.
Royal icing dries hard; store decorated cookies in single layers with parchment between.
To thin icing for flooding, add water drop by drop until it flows like honey.
Use gel colors for vibrant shades without altering icing consistency.
