Ingredients
- 1 soft hamburger bun, split
- 4 ounces (113g) ground beef (80/20)
- Kosher salt and freshly ground black pepper
- 1 slice American cheese
- 2 dill pickle slices
- 2 thin slices white onion
- 1 tablespoon special sauce (see tip)
- 1 tablespoon vegetable oil
Instructions
- Preheat a cast-iron skillet or griddle over high heat until smoking.
- Form the ground beef into a loose ball; do not overwork.
- Place the beef ball on the hot skillet and immediately smash it flat with a heavy spatula until about 1/4 inch thick.
- Sprinkle generously with salt and pepper. Cook for 2 minutes until edges are browned and crispy.
- Flip the patty, immediately place cheese slice on top, and cook for 1 more minute.
- While patty cooks, toast the bun cut-side down in the skillet for about 30 seconds.
- Assemble: spread special sauce on both bun halves, place patty with cheese on bottom bun, top with pickles and onion slices, then close with top bun.
Tips
- Special sauce: mix 2 tablespoons mayonnaise, 1 tablespoon ketchup, 1 teaspoon sweet pickle relish, and a dash of white vinegar.
