Ingredients
- 1.5 lbs (680g) chicken thighs or drumsticks, cut into chunks
- 3 cups water
- 3 tablespoons gochugaru (Korean red pepper flakes)
- 2 tablespoons gochujang (Korean red pepper paste)
- 2 tablespoons soy sauce
- 1 tablespoon minced garlic
- 1 tablespoon grated ginger
- 1 tablespoon sugar
- 1 tablespoon sesame oil
- 2 medium potatoes, peeled and cubed
- 1 large carrot, peeled and cubed
- 1 medium onion, sliced
- 2 green onions, sliced
Instructions
- In a large pot, combine chicken, water, gochugaru, gochujang, soy sauce, garlic, ginger, sugar, and sesame oil. Stir well.
- Bring to a boil over high heat, then reduce to medium-low. Cover and simmer for 20 minutes.
- Add potatoes, carrot, and onion. Stir, cover, and simmer for another 15-20 minutes until vegetables are tender and chicken is cooked through.
- Uncover and increase heat to medium-high. Cook for 5 minutes to slightly thicken the sauce.
- Garnish with green onions and serve hot with rice.
Tips
- Adjust spiciness by reducing gochugaru and gochujang if desired.
- Leftovers can be refrigerated for up to 3 days and taste even better the next day.
- Add tofu or mushrooms for extra texture.
