Ingredients
1/2 cup almonds
1/4 cup walnuts
2 tablespoons pumpkin seeds
1 tablespoon sunflower seeds
1 tablespoon sesame seeds
1 tablespoon honey or maple syrup
1/4 teaspoon salt
1/2 teaspoon vanilla extract (optional)
Instructions
Preheat a dry skillet over medium heat.
Add almonds, walnuts, pumpkin seeds, sunflower seeds, and sesame seeds to the skillet. Toast, stirring frequently, until fragrant and lightly golden, about 3-4 minutes.
Remove from heat and let cool slightly.
Transfer the toasted nuts and seeds to a food processor or a zip-top bag. Pulse or crush with a rolling pin until coarsely crushed (not a powder).
In a small bowl, mix the crushed mixture with honey or maple syrup, salt, and vanilla extract (if using). Stir until well combined.
Let cool completely before storing in an airtight container.
Tips
Store in an airtight container at room temperature for up to 2 weeks.
Sprinkle generously over yogurt, ice cream, or even oatmeal.
For a nut-free version, replace almonds and walnuts with additional seeds like hemp or flax.
