Ingredients
1 cup crushed saltine crackers or panko breadcrumbs
1/4 cup grated Parmesan cheese
1 teaspoon dried parsley
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
1/4 teaspoon salt
2 tablespoons melted butter or olive oil
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a medium bowl, combine crushed crackers, Parmesan, parsley, garlic powder, onion powder, pepper, and salt.
Drizzle melted butter over the mixture and stir until evenly moistened.
Pat chicken breasts or fish fillets dry. Brush lightly with olive oil or melted butter.
Press the crust mixture firmly onto the top of each piece, coating evenly.
Place on prepared baking sheet. Bake chicken for 20-25 minutes or until internal temperature reaches 165°F (74°C); bake fish for 12-15 minutes or until flakes easily with a fork.
Tips
For extra crunch, use panko breadcrumbs instead of crackers.
Store leftover crust mixture in an airtight container in the refrigerator for up to 1 week.
