Ingredients
1 1/4 cups all-purpose flour
1 teaspoon instant yeast
1/2 teaspoon salt
1/2 teaspoon sugar
3/4 cup warm milk (about 110°F)
1/4 cup warm water
1/2 teaspoon baking powder
Butter, for serving

Instructions
In a bowl, whisk together flour, yeast, salt, and sugar. Add warm milk and water, and beat until smooth. Cover and let rest in a warm place for 30 minutes until bubbly.
Stir in baking powder until well combined. The batter should be thick but pourable; add a tablespoon of water if too thick.
Heat a non-stick skillet or griddle over medium-low heat. Lightly grease crumpet rings (or use egg rings) and place in the pan.
Pour about 1/3 cup batter into each ring. Cook for 5-7 minutes until bubbles form on the surface and the edges look set.
Remove rings carefully, flip crumpets, and cook for another 2-3 minutes until golden brown on the second side.
Transfer to a wire rack. Toast lightly before serving, then top generously with butter and jam.
Tips
For extra nooks and crannies, let the batter rest longer (up to 1 hour) before adding baking powder.
Serve immediately after toasting for the best texture.
Store leftover crumpets in an airtight container; reheat in a toaster.
