Ingredients
1 large croissant, split
2 slices deli ham
1 large egg
1 slice cheddar or Swiss cheese
1 tablespoon butter
Salt and pepper to taste
Instructions
In a small nonstick skillet, melt 1/2 tablespoon butter over medium heat. Crack the egg into the skillet and cook until the white is set but the yolk is still runny, about 3 minutes. Season with salt and pepper. Flip and cook 30 seconds more for over-easy, or cook longer if desired.
While the egg cooks, place the ham slices in the skillet to warm for about 1 minute per side.
Toast the croissant halves in a toaster or in the skillet until lightly golden.
Assemble the sandwich: Place the cheese on the bottom half of the croissant, top with the ham, then the cooked egg. Close with the top half of the croissant.
Serve immediately.
Tips
For a firmer yolk, cook the egg sunny-side up without flipping until the white is fully set.
Add a slice of tomato or a handful of arugula for extra freshness.
If using a microwave, cook the egg in a microwave-safe dish for 45-60 seconds on high.
Wrap the sandwich in foil and warm in a 350°F oven for 10 minutes if making ahead.
