Ingredients
1 large croissant, split in half
2 slices bacon
1 large egg
1 slice American cheese
1 tablespoon butter
Instructions
Cook bacon in a skillet over medium heat until crispy, about 4-5 minutes. Transfer to paper towels; drain fat, reserving 1 teaspoon in skillet.
In the same skillet over medium heat, add butter. Once melted, crack egg into skillet. Cook until whites are set but yolk is still runny, about 2-3 minutes. Season with salt and pepper. If desired, flip and cook 30 seconds for over-easy.
Place cheese slice on bottom half of croissant. Top with cooked egg, then bacon. Close with top half of croissant.
Optional: Place assembled sandwich in a 350°F oven for 2-3 minutes to warm and melt cheese.
Tips
For a firmer yolk, cook egg until yolk is fully set.
Substitute turkey bacon or vegetarian bacon if desired.
