8 large croissants, split
12 large eggs
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons unsalted butter
8 slices deli ham
8 slices Swiss or cheddar cheese
Optional: Dijon mustard or honey mustard for spreading
Instructions
Preheat oven to 350°F (175°C).
In a large bowl, whisk together eggs, milk, salt, and pepper until well combined.
Melt butter in a large nonstick skillet over medium heat. Pour in egg mixture and cook, stirring gently, until eggs are just set but still soft, about 5-7 minutes. Remove from heat.
Arrange the bottom halves of croissants on a baking sheet. If desired, spread a thin layer of mustard on each.
Divide the scrambled eggs evenly among the croissant bottoms. Top each with a slice of ham and a slice of cheese.
Place the top halves of croissants on the sandwiches. Bake for 10-12 minutes, until cheese is melted and croissants are warm and slightly crispy.
Remove from oven, let cool for 2 minutes, then serve warm.
