Ingredients
1 (6 oz) package orange Jell-O
1 cup boiling water
1 cup cold water
1 (8 oz) package cream cheese, softened
1/2 cup granulated sugar
1 (8 oz) container frozen whipped topping, thawed
1 (20 oz) can crushed pineapple, undrained
1 (10 oz) jar maraschino cherries, drained and chopped (optional)
Instructions
In a large bowl, dissolve the orange Jell-O in 1 cup boiling water. Stir in 1 cup cold water. Set aside to cool to room temperature, about 15 minutes.
In a separate bowl, beat the cream cheese and sugar together until smooth. Fold in the thawed whipped topping until well combined.
Stir the undrained crushed pineapple into the cream cheese mixture.
Pour the cooled Jell-O into a 9x13-inch dish. Gently spoon the cream cheese mixture over the Jell-O; do not stir. If desired, sprinkle chopped cherries on top.
Refrigerate for at least 4 hours or until set. Serve chilled.
Tips
For a lighter version, use sugar-free Jell-O and reduced-fat cream cheese.
This salad can be made a day ahead; cover and refrigerate until serving.
Garnish with additional whipped topping and orange slices if desired.
