Ingredients
4 cups granulated sugar
1 cup light corn syrup
1/2 cup water
1/4 teaspoon salt
1 teaspoon vanilla extract
Food coloring (optional)
Instructions
In a medium saucepan, combine sugar, corn syrup, water, and salt. Stir over medium heat until sugar dissolves.
Bring mixture to a boil without stirring. Attach a candy thermometer and cook until temperature reaches 320°F (hard crack stage).
Remove from heat and stir in vanilla extract and food coloring if desired.
Let the mixture cool slightly until it stops bubbling, then pour into the cotton candy machine's reservoir.
Turn on the machine and spin the cone or stick in the center to collect the cotton candy. Repeat until all syrup is used.
Serve immediately or store in an airtight container for up to 24 hours.
Tips
Work quickly as the syrup hardens fast.
Use a separate machine for different colors to avoid mixing.
