Ingredients
- 1 cup long-grain white rice or 8 oz dried pasta
- 2 cups water for rice (or 4 quarts water for pasta)
- 1/2 teaspoon salt
- 1 tablespoon butter or olive oil (optional)
Instructions
- For rice: Rinse rice in a fine-mesh strainer under cold water until water runs clear.
- In a medium saucepan, combine rice, 2 cups water, and salt. Bring to a boil over high heat.
- Reduce heat to low, cover, and simmer for 15 minutes without lifting the lid.
- Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork and add butter or oil if desired.
- For pasta: Bring 4 quarts water to a rolling boil in a large pot. Add salt.
- Add pasta and cook according to package directions until al dente, stirring occasionally.
- Reserve 1 cup pasta water, then drain pasta. Toss with sauce or oil as desired.

- For pasta, reserve pasta water to adjust sauce consistency.
